  • Asti DOCG

    This is the most traditional of Italian sparkling wines and the first to boast the Controlled and Guaranteed Denomination of Origin. Asti Morando is produced in the cellars at the foot hills where the Moscato grapes, from which it originates, are grown. The aroma and fragrance of the sweet, sugary grapes is accompanied by the freshness and liveliness of a great quality sparkling wine. A symbol of festivity, it is ideal at the end of a meal. Colour: straw-yellow, full of golden hues; aroma: enveloping, fruity, delicate; flavour: sweet, balanced, refreshing.

    Vinification
    Soft crushing of the handpicked grapes with consequent chilling of the must to prevent fermentation, and storage in cold rooms at 0° C to await subsequent processing. The must is later moved to pressurised vats, brought to a temperature of 15° C and left to ferment until it reaches an alcohol content of 7.5° and a pressure of 5 bar.

    It is the ideal accompaniment to desserts, but also to some full-flavoured, robust cheeses. It is also suitable as an aperitif, with ham and melon in the summer it is an excellent thirst-quencher.

  • Moscato Spumante

    The special processing of this excellent product, which starts out with the unfermented must, instead of from the wine as occurs in normal types of sparkling wine, allows for the perfect preservation of the characteristic aroma and the freshness of the original vine. Colour: pale straw-yellow; aroma: delicately fruity; flavour: sweet, very balanced, refreshing. It should be drunk when young and served at a temperature of 6°-8° C.

    Soft crushing of the handpicked grapes with consequent chilling of the must to prevent fermentation, and storage in cold rooms at -2° C to await subsequent processing. The must is later moved to pressurised vats and left to ferment until it reaches an alcohol content of 6.5° and a pressure of 4 bar.

  • Piemonte Brachetto

    Excellent red sparkling wine obtained from the exclusive Brachetto grapes, grown in a limited area between the provinces of Asti, Cuneo and Alessandria; today it is one of the leading products on the international market for dessert wines. Colour: dark ruby red with coopery hues; aroma: fruity, grapey with a delicate musky aroma; flavour: sweet, refreshing, well-balanced. Recommended serving temperature is 8°-10° C.

    Vinification on the skins: crushing and stemming of the grapes, maceration and fermentation with the skins at a controlled temperature for several hours (36/48) at around 16°C and subsequent pressing. Second fermentation occurs in pressurised vats to encourage re-fermentation at a controlled temperature for about 20 days at around 16°C.

  • Malvasia Spumante

    A young and contemporary wine, yet with very old traditions; it blends a sweet, balanced flavour with a full body. Ideal with sweets and fruit, it is an absolutely unique sparkling red wine, obtained using the Charmat method. Colour: ruby red, almost rosé; aroma: fruity, delicate; flavour: sweet, refreshing, well-balanced. Recommended serving temperature is 8°-10° C.

  • Pinot Chardonnay

    This sparkling wine, one of the most traditional produced by Casa Vinicola Morando, is created from a skilful blend of Pinot and Chardonnay grape varieties. This is a sparkling wine with exceptional balance, it is rounded, and is produced using the Charmat method. This is a Crémant sparkling wine, with a fine and persistent mousse, ample bouquet, full and fragrant. Colour: pale straw-yellow with greenish tinges; aroma: pronounced and distinctive, refreshing, fragrant and fruity; flavour: dry and lively, full, with an elegant texture. Serve at a temperature of 6°-8° C.

    Soft pressing of the grapes and first fermentation at a low temperature in steel vats. Second fermentation using the Charmat method in steel pressurised vats at a controlled temperature up to a pressure of 5 bar.

  • Prosecco Extra Dry

    This is a sparkling wine that undergoes natural fermentation with the Charmat method. Produced from the best grapes in the hilly production area, it embraces all the fragrance that is typical of Prosecco. It has a pale straw-yellow colour with fine perlage and a fruity aroma that is particularly intense. Flavour: well-balanced and moderately full-bodied. Serving temperature is 6°-7° C.

    Soft crushing of the handpicked grapes, low temperature fermentation in steel vats. Second fermentation using the Charmat method with re-fermentation in pressurised vats for about 30 days at a temperature of 16-18° C.
